Jollof Rice is the most popular rice recipe in Nigeria. It is also a big party favorite served at almost every wedding, birthday, housewarming, corporate event etc. Served extra spicy, this dish is certainly one to be remembered.

INGREDIENTS (serves 4)

-1/3 cup pure oil (groundnut, soybean,vegetable)
-1 large onion (sliced)
-2 small cans/sachets of tomato paste
-2 seasoning cubes
-1 teaspoon each (Thyme, curry, nutmeg )
-2 teaspoons black pepper
-2 teaspoons cayenne pepper
-6 bay leaves
-1 can of sweet corn (optional)
-1 can of green peas (optional)
-2.5 cups rice (preferably Basmati)


1. Place a pot with a tight fitting lead on medium heat, add in the oil. Heat up the oil, add in a inch of salt, then chopped onions. Fry for 1 min.

2. Add in the tomato paste, fry the onion and paste for 3mins.

3. Pour in 2.5 cups of water, then add rice.

4. Add in the seasoning cubes, thyme, curry, cayenne pepper, black pepper and salt.

5. Cover the pot with the foil and then the lid. (It’s extremely important that the pot is well covered as we are trying to infuse each grain of rice)

6. Leave to cook (on Minimum heat) for 30 mins.

7. Add in sweet corn and peas. Cook for 5 mins.

8. Remove the pot from heat, the Combine ingredients. (Be careful not to combine when the pot is still in the fire to prevent burning.)

*If the texture of rice isn’t to your liking at this point, simply cover the pot tightly for another 6mins (there is no need to return the pot back to the heat, the retained heat is enough to continue to cook the rice). Otherwise the rice is ready to serve.

Not a fan of spicy food, you can reduce the quantity of ingredients according to preference.


Remove the bay leaves and Serve jollof rice with chicken, beef, fish, plantains, moimoi, eggs, salad etc. The list is endless.

Akara also known as bean cake is a staple breakfast food from Southern Nigeria made from ground beans mixed with spices. The ground beans paste is then deep fried in groundnut oil till it turns a dark golden brown which indicates that it is well cooked and ready to be eaten.

Akara is usually served locally with a side of Bread, Custard, Pap (local corn custard) or even Garri.

-1 cup peeled beans
-1 raw chilli pepper
-1 raw egg
-2/3 teaspoon of salt
-3 teaspoons of chopped basil
-1/4 cup chopped cooked shrimp (optional)
– Vegetable oil for frying


1. In a blender, combine the chilli and beans (do not add water).

2. Pour the pureed beans into a bowl, add in the salt, crack in the egg.

3. Mix combined ingredients with a spatula until everything is well incorporated. (do a taste test for salt, adjust if you need more)

4. Set a deep pan on medium heat, add in some oil.

5 Once the oil is hot enough, add the basil(and shrimps if using) into the beans mixture and combine.

6. Ball up the beans and add it into the oil. Fry on each side until golden brown (2.5mins).

7. Lift out the akara balls with a slotted spoon and drain on kitchen paper.

8. Repeat the process until everything is fried.

9. Serve alone or with a side of Pap, Bread, Custard or Garri.

A Brief Background
I’ve been called Honey since I was little; my family has always called me that, and so it is my ‘identity’. I love to bake and experiment with food and flavors in the kitchen, and so when I decided to start baking cupcakes professionally, it only made sense to name the cupcakery ‘Honey’s Cupcakes’.


The Idea
The idea of Honey’s Cupcakes was born in the summer of 2007. I had just graduated from the University of Massachusetts, in Boston, and I had a lot of spare time on my hands. So I started baking…everyone I gave my baked goods to suggested I sell them. And then I moved back home and made a few cupcakes for a gathering, and got such high recommendations that I decided to take the final step. I registered the business name in 2010 and launched the site in the summer of 2011.

Inspiration For Creativity
The slogan to the company is “…I dream of cupcakes”. People often don’t believe me, but I literally have ideas of flavors ‘come’ to me in dreams. I know… it does sound a bit crazy, but there it is.

Original Flavours
Other than the “Lead Roles”, which feature classic flavors such as The Very Vanilla and The Red Velvet, all other flavors on our menu are unique. We have a signature cupcake that’s called Honey Love. Every menu, we reinvent this flavor that’s made with honey and make different editions of it. The current edition of Honey Love is The Sticky Toffee Edition. It’s our interpretation of the classic British dessert, Sticky Toffee Pudding.


Unique Selling Points
We primarily pride ourselves with the freshness and quality of the ingredients used to create our sweet treats. And when we say create, we do mean that we create them. All of our cupcakes and frostings are made from ‘scratch’ and original recipes in our kitchen. Our cupcakes are made fresh for every order, and are frosted shortly before delivery. We are a luxury brand, and as such we source the freshest and finest natural ingredients on the market, regardless of how far we have to go to find them!
