I came across this wonderful pancake recipe from the author of the HELLO OCTOBER blog and I thought it would make a great weekend breakfast suggestion (dancing at the thought of the weekend, lol). Wouldn’t you agree with me that the pancakes shown below look absolutely delicious? However, this may not be achievable for those of us who live in the tropics and so I decided to tweak the recipe a bit by replacing the strawberries for dried cherries or apricots (fresh apples can also be used) which can easily be found in supermarkets.
1 Medium Egg
4 (or more) Medium Strawberries, Apples, Dried Cherries or Dried Apricots
She mixed her dry ingredients together first, followed by the milk and egg, before pouring a little at a time into a lightly buttered frying pan. Once the mixture
was spread to its desired shape.
She dropped the strawberries (alternatives: apples, dried cherries or dried apricots) into the mixture, this left the strawberries open on one side but if you want the fruit coated in pancake mixture then simply pop them in your mixing bowl/jug with the mixture.
She then cooked them until they were a golden brown – or as close as possible – on both sides.
Repeat this until the mixture is used up and then eat (and Instagram
) your heart out.
